I've gotten myself into another pickle... well a good pickle I suppose...
Last night the kids and I ( not even my own kids I might add.. lol lol) made pickles..
Sweet Dill Pickles this time

This pickle is less involved.. but with kids..well.. you know how that can go .. especially for someone who is obsessed with her kitchen. Dirty dishes in the sink drives me insane... so I wash as I go.

This recipe is kind of "vague" so I will try and help you with what I did. This is a Amish Recipe and doesn't tell you how many pints you will end up with in the end...

Here's what the jar looks like packed as tight as I possibly can get everything...
And this is the final product... no matter how tight you pack these... the "brine" starts shrinking those "chips" and leaves all that room... ( at least for me).

Sweet Dills

Cucumbers, sliced
Fresh Dill heads
Garlic Cloves

Fill jars with sliced cucumbers, adding 2 bunches of dill and 3 or 4 garlic cloves to each quart. Pour brine over cucumbers.

Brine

1 quart weakened vinegar ( 1/2 water maybe be used)
2 cups water
1/4 cup salt
4 cups of sugar

Bring all brine ingredients to a boil. Immediately fill jars and put on lids. Process jars in hot water bath for about 10 minutes.

I doubled this recipe and I got 18 pint jars.. so I bet the recipe in truth calls for 7 pint jars ( I tend to get a couple extra out of most recipes). I cut up enough cukes to fill that amount of jars and for the weakened vinegar it said to use 1/2 water... so that's what I did.. I used 1/2 of a quart and then the rest water.. I haven't TASTED these baby's yet... but I'll let you know when I do...

Wanted to let you know.. I haven't stopped reading at all this summer.. I'm just not reading as much due to the kids here all day long and keeping up with things.. so when night time comes.. I treasure those couple of hours of reading!! Ü

I am a fan of bread and butter pickles ( i know how gross.) Do you think these are similar in taste. I don't have a garden as I told you before. But to be nice and frugle I plan to spend a whole day cooking and freezing between 15-20 meals for the upcoming sport season when life gets a little busy around these parts. Have a Super weekend!

These are SO good - I've waited a whole year to make some! Calvin loved them as well, and I think Isabella ate more pickles than other foods at dinner the other day! By the time we noticed, she had eaten 1/2 the jar herself!

I wanted to mention a trick to prevent the shrinking. If you will cut your cucumbers up, and put them in a large bowl, cover them with ice, and sprinkle 1/3c salt over them, then let them set for 3 hours, this will 'preshrink' the cucumbers for you, and they wont rise up so much in the brine when you pickle them. Be sure to rinse them well prior to putting them in jars:)
