Today is national Woody Woodpecker day!! "He-he-he-HA-HA!".....I loved this Cartoon growing up... Woody wasn't such a lovable creature that's for sure.. he was more annoying than anything! But he could truly hold a child's attention for some time!

1943 Karo Popcorn Balls
1 cup Karo (blue label)
1 tsp vinegar
2 tbsp butter
1 1/2 quarts popped corn
1/4 tsp salt
Put Karo and vinegar in a saucepan and cook, stirring occasionally to prevent burning, to 275 degrees (or until a little dropped in cold water is brittle). Add butter and stir only enough to mix. Pour cooked syrup slowly over salted popped corn and mix well. Form into balls with hands,using as little pressure as possible.
Yield: 10 popped corn balls, about 2 1/2 inches in diameter.

I'm chubby... and not liking it right now.!! Last spring I was so proud of myself.. I ran our track.. I lost weight, clothes fit better and I felt better I had TONS of energy... then my son got sick in October and we didn't even figure out what he had til February... I didn't think about myself in those months.. and depression set it.. I gained all my weight back and more... You know what they say.. the weight you lose.. you always gain back more and I did..!! UGH!! So I have decided this Monday to go back on the Journey of Weight Watchers... It's the BEST program for me!! I know that I would do ok on my own.. but I need the accountability and the justification of spending the money! My hubby supports me 100% and tells me I'm beautiful just the way I am... awwww... but when my clothes don't fit.. and summer is coming I don't want to feel frumpy and feel like I have to hide! I have let the enemy sneak in and cover my emptiness and sorrow with food... Psalm 18:17 "He rescued me from my powerful enemy" my powerful enemy is food! Soooo all my bloggy friends.. can you keep me accountable and ask how it's going? I really truly honestly want to be successful this time!! I don't want to give up!! On that note.. I have to scoot to a friends for dinner and a birthday cake.. yikes...

Don't bust your waistline with high-fat, fried cheese sticks. Our slimmed-down version hits the spot and is much healthier for you.
2 sprays olive oil cooking spray, divided
8 oz canned tomato sauce
2 tsp ground oregano, divided
3 slice reduced-calorie wheat bread, torn
1 tsp dried thyme
8 oz part-skim mozzarella cheese, cut into 8 finger-like strips
2 Tbsp honey mustard
Instructions
Preheat oven to 400ºF. Coat a baking sheet with cooking spray.
In a small saucepan, combine tomato sauce and 1 teaspoon of oregano; set pan over low heat and simmer 10 minutes.
Meanwhile, in a food processor, combine bread, remaining teaspoon of oregano and thyme; process until mixture resembles fine crumbs. Place crumbs in a shallow bowl. (Tip: Use the ends of the loaf of bread for the bread crumbs since those slices are often uneaten.)
Coat cheese sticks with honey mustard. Transfer cheese to bread crumb mixture and turn to coat. Arrange cheese on prepared baking sheet and lightly coat with cooking spray.
Bake until golden brown, about 4 to 5 minutes. Serve with warmed tomato sauce on the side. Yields 2 cheese sticks and about 1/4 cup of sauce per serving.

To create the bon bons:Line a baking sheet with plastic wrap. Freeze the baking sheet until it is very cold. Dip a melon baller into a cup of hot water, then scoop the ice cream to form a ball that is 1 inch/3 cm in diameter.Immediately place the ice cream ball on the frozen baking sheet. Repeat with the remaining ice cream, working as quickly as possible so that the ice cream balls do not begin to melt and dipping the melon baller in the hot water before each ball is formed, to make 40 balls total. Reserve any remaining unused ice cream for another use.Place the ice cream balls in the freezer for at least 1 hour or until they are set firmly.Place a 12x12-inch/30x30-cm piece of Styrofoam on the work surface. Working quickly, place a toothpick into each ice cream ball and loosen the ice cream balls from the baking sheet. Stick the opposite end of the toothpicks into the Styrofoam so that the ice cream balls stand upright on the Styrofoam.Return the ice cream balls to the freezer and freeze until set.
To coat the bon bons:Meanwhile, place the dark chocolate in a small bowl and set the bowl over a saucepan of simmering water. Stir the chocolate until it melts and no lumps remain.Set the melted chocolate aside until it is barely warm. Be sure the melted chocolate is not hot when you use it or else it will melt off of the ice cream rather than coat it.Dip the ice cream balls into the melted chocolate to coat completely. Gently shake the excess melted chocolate back into the bowl. Once the melted chocolate stops dripping, stick the bon bons back onto the Styrofoam. You may want to work in batches and freeze the ice cream balls between the batches to ensure they do not melt.Once all balls have been coated thoroughly in the melted chocolate and stuck into place, put them back into the freezer for about 30 minutes to set the chocolate.While the bon bons are in the freezer, place the white chocolate in another small bowl and set the bowl over the saucepan of barely simmering water. Stir constantly until the white chocolate melts.Pour the melted white chocolate onto a sheet of plastic wrap. Gather the sides of the plastic wrap and hold the pouch of white chocolate firmly. Twist the pouch. Pierce the bottom of the pouch with a sharp toothpick or skewer.Drizzle the white chocolate decoratively over the bon bons. Return the bon bons to the freezer for a further 30 minutes. Reserve any remaining white chocolate in the pouch for another use.Once the white chocolate has set, remove the toothpicks and place the bon bons on a plate or platter and serve immediately.

Ingredients:
Combine flour, soda, spices and salt. Beat shortening for 30 seconds, add sugar and beat until fluffy. Add molasses and egg. Beat til combined. Add dry mix and beat on low until combined. Shape into 1 1/2 inch balls, roll in granulated sugar, and place 3 inches apart on ungreased cookie sheets. Bake at 350 degrees for 15 minutes or until light-brown. Cool on racks. Makes 20. Note: I also make tiny gingersnaps and shape the balls into barely one inch in size.

I was tagged by Curl Girl today.. so I must tell you 10 different things about me that you might not know!!... hmmm let's see...

Set aside a regular short period of time each week for the family to straighten up the house. It teaches good habits to the kids and gives the family a project to do together. Everyone will feel better when the job is done, and might just look forward to the day when they know things are going to be neat and organized.
Automatic-dishwasher detergent works well on refrigerators, stoves, floors, walls and glass.
Dissolve 1/4 cup in one gallon of very hot water.
Wipe with a dry cloth afterward.
Wear rubber gloves and test first to make sure that what you're cleaning is colorfast.
Clean Windows
Wash windows on a cloudy, but not rainy day. Working in direct sunlight causes streaks because the cleaning solution dries before you can wipe it off. This is the best time to vacuum the frames and sills. Cool, clear water is the choice of most professional window washers. If windows are very dirty you can add 2 to 3 tablespoons of vinegar per gallon of water. Use horizontal strokes on the inside and vertical on the outside so you know which side the streaks are on. for drying windows, a wad of crumpled newspaper works just as well as expensive paper towels. Wear rubber gloves to keep your hands free of ink.
Quick fix for shiny wood floors.
Put a piece of waxed paper under your dust mop. Dirt will stick to the mop and the wax will shine your floors.

Today I'm terribly tired.. on a normal working day I wake up at 5:30 am and get home from work around 2ish.. today not so.. 5:30pm was my time home... I get home in time to kiss my husband walking out the door for work.. and greeting my overly active 11 year old son and my Spanish daughter... within 15 minutes my daughter is home from softball practice.. ahhhhh a moment of relaxation... or so I thought... "KNOCK KNOCK'... UGH Someone is at my door.. well.. it's three young boys who ACT like they are my sons friends, when in truth, they use him as a convenience to them... the littlest one says to me "Can I use your bathroom"? ME.. I say "um why? use your own.. ".. Ok.. so I know he doesn't live in this neighborhood.. but is buddy standing right next to him DOES and he has 2 bathrooms vs my 1.... The kids then pipe up and ask can my son come out to play.. Ummm.. me.. "NOPE"!!! You're not going to use my son to pee in my toilet!!! I told them since they were all playing together they could go pee in the other child's toilet...GOOD GRAVY!! I shut the door.. do I need to hang a sign on my door that says "PEE AT YOUR OWN HOME OR THE CHILD'S HOME YOU ARE VISITING"....?? Is there a bible verse for this???????? WAIT.. Maybe there is a small bit of scripture.. John 16:20 in the later part of the scripture says.. "You will grieve, but your grief will turn to joy"... Can some one please explain to this tired mom tonight.. how I would have gotten joy by letting that child pee in my toilet????????? Honestly I did feel guilty for closing the door on him.. but..... this is the same child that borrowed a video game from my son and ruined it and then denied he ever had it.. maybe I'm holding more than grief...... ??????
Brick Oven Pizza ( Brooklyn Style)
INGREDIENTS
1 teaspoon active dry yeast
1/4 cup warm water
1 cup cold water
1 teaspoon salt
3 cups bread flour
6 ounces low moisture mozzarella cheese, thinly sliced
1/2 cup no salt added canned crushed tomatoes
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
3 tablespoons extra-virgin olive oil
6 leaves fresh basil, torn
DIRECTIONS
Sprinkle yeast over warm water in a large bowl. Let stand for 5 minutes to proof. Stir in salt and cold water, then stir in the flour about 1 cup at a time. When the dough is together enough to remove from the bowl, knead on a floured surface until smooth, about 10 minutes. Divide into two pieces, and form each one into a tight ball. Coat the dough balls with olive oil, and refrigerate in a sealed container for at least 16 hours. Be sure to use a big enough container to allow the dough to rise. Remove the dough from the refrigerator one hour prior to using.
Preheat the oven, with a pizza stone on the lowest rack, to 550 degrees F. Lightly dust a pizza peel with flour.
Using one ball of dough at a time, lightly dust the dough with flour, and stretch gradually until it is about 14 inches in diameter, or about as big around as the pizza stone. Place on the floured peel. Place thin slices of mozzarella over the crust, then grind a liberal amount of black pepper over it. Sprinkle with dried oregano. Randomly arrange crushed tomatoes, leaving some empty areas. Drizzle olive oil over the top.
With a quick back and forth jerk, make sure the dough will release from the peel easily. Place the tip of the peel at the back of the preheated pizza stone, and remove peel so that the pizza is left on the stone.
Bake for 4 to 6 minutes in the preheated oven, or until the crust begins to brown. Remove from the oven by sliding the peel beneath the pizza. Sprinkle a few basil leaves randomly over the pizza. Cut into wedges and serve.

BASEBALL BARS
2/3 c. butter
FIRST LAYER: Melt butter in large saucepan. Add brown sugar, corn syrup, peanut butter and vanilla. Stir over low heat until melted. Add oats and stir well. Pour into well-greased 9 x 9 inch pan. Pat down with a spoon. Bake at 375 degrees for 15 to 20 minutes until brown. Remove from oven and spread with second layer.
SECOND LAYER: Melt chips together over low heat in a clean saucepan. Add peanut butter and chopped nuts. Stir well and spread over warm first layer. Cool. Refrigerate to set chocolate before cutting.
